Chocolate Chip Pumpkin Muffins
Makes about 36 mini muffins
Ingredients:
- 1 ½ cups flour
- 1 tsp baking powder
- 1 cup canned pumpkin (a heaping cup is fine)
- 1/3 cup canola oil
- 2 large eggs
- 1 ¼ cups white sugar
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ginger
- ¼ tsp cloves
- ½ bag of mini chocolate chips
Preheat oven to 350 degrees.
- Whisk together flour and baking powder in a small bowl.
- Whisk together all other ingredients in a big bowl. Add flour mixture and mix until combined.
- Add chocolate chips.
- Bake for 18-20 minutes (for mini-muffins).
