What first inspired your love of food/cooking?

My father, who’s hobby was cooking and had a small catering when I was growing up

Who (or what) has had the most influence on your cooking?

Working in Manhattan with Charlie Palmer and the late Gerry Hayden. They taught what it takes to be a great chef and restaurateur.

What are you most proud of in your career as a chef?

Being able to make people happy through creativity with food and parlaying that into a restaurant that has been open for over 10 years, which is a great achievement

What is your favorite thing to cook on your day off?

Mac and cheese for my kids and chicken soup from scratch for my wife. (I eat them both!)

If you weren’t in the food business what would you be doing?

I would probably be working in PR and marketing in the sports field. That is what I have my bachelors degree in.

What do you see coming up as the next big food trend in 2018?

There have been many trends over the years, but I think tacos are going to take off. Taco Tuesdays are becoming more and more popular at restaurants and at home. Tacos are a big draw at restaurants and you now see taco joints opening more and more.
