Gables Pizza and Salad: Not Your Typical Italian Restaurant

Great food, served with a smile, for a small price. This is Gables Pizza and Salads (GPS) in a nutshell. After 25 years in the restaurant business, Miguel Bermudez opened GPS in 2009 with a simple formula of classic pizza and pasta along with delicious salads. “It’s a unique concept,” said Bermudez. “We combine your favorite junk food with healthy food.”

With a degree from Le Cordon Bleu Culinary College in Miami, where he graduated Cum Laude, and a background including positions at restaurants varying from Ruth’s Chris to Beverly Hills Café, Bermudez had the desire to expand on his health food background with salads and his love of pizza. After finding a great location set up for pizza, he purchased equipment to add in his salad creations, and the rest was history.

GPS’s large salads are very popular, as evidenced by a demand for them all day and night. With a design-your-own salad concept, guests can select a 4, 6, or 12 topping salad and choose from over 70 toppings and proteins. Toppings include fresh vegetables, fruits, cheeses, and items to add a little crunch like tortilla strips, trail mix, pita chips, and crispy noodles. Protein choices consist of the typical turkey, ham, and tuna, and the not so typical, such as meatballs. Top your salad off with a choice from several homemade salad dressing offerings, including a few fat free options. Finalize your order by having it either tossed or chopped.

If you need a little inspiration, GPS has over 15 pre-created salads on their menu, including a few favorites such as the “Taco Salad,” which includes pico de gallo, guacamole, tomatoes, cheddar cheese, black beans, and tri-colored tortillas, and the “Nutty Apple,” which includes apples, candied walnuts, grapes, raisins, peanuts, and craisins. Any salad can alternatively be made into a wrap, with a choice of 5 different types of tortillas.

With something for everyone, GPS also offers more than your typical Italian fare. Pizza is available by the pie or the slice. One of the most popular specialty pies off the menu, is the famous “Abuelita’s Margarita,” which includes ricotta cheese, alfredo, mozzarella cheese, fontina cheese, fresh mozzarella, parmesan, tomatoes and basil. Another unique pizza selection is the Pizzagna, which is made with your choice of veggie or beef combined with GPS’s ricotta cheese blend and their pizza cheese blend. Or, if you’re looking for something custom, create your own pie with either regular or honey wheat crust, and a choice of various toppings. Oven baked Italian sandwiches are also offered including eggplant or chicken parmesan, as well as a large selection of pasta dishes, including a special twist on the classic mac and cheese. If after all of that you still have room for dessert, ask about the sugar rolls!
